No worries! The flour is unbleached and it is stone ground which means it retains more of the germ and bran so it is normal to have a darker color.


Your pan may not be hot enough or you may have used too much oil in the pan. My non-stick pan works so great that I no longer use oil in the pan! Swirling the batter in a hot non-stick pan may work just fine for you. If not, just toss the first disastrous crepe and keep going!


This is very common with initial forays into crepe making! There are several possible reasons. Here are a few:

  • The batter may be too thick or you may have poured too much batter in the pan.              Solution: Add a little more milk. Try to make your crepes as thin as possible by using the smallest amount of batter necessary to cover the bottom of your pan.


  • The pan may not be hot enough.

               Solution: Turn up the heat.
